These two are the varieties buyers ask us to compare more than any other pairing — both grown in Kerman Province, both dark and sweet, and easy to confuse from a product photo alone. Here's the actual difference, and how to decide between them for your first order.

The Core Difference

Mazafati is softer, darker and wetter — at up to 35% moisture, it has a fudgy, almost melt-in-the-mouth texture with notes of dark chocolate and molasses. Kaluteh is firmer and drier by comparison (14–22% moisture), with a more caramel-forward sweetness and a sturdier oval shape that holds up better in transit and on a retail shelf.

If You're Optimizing for Shelf Appeal

Oiled Kaluteh has a glossy, deep-brown finish that photographs and displays extremely well in retail — it's the variety we feature in our own packing-line footage for exactly that reason. If your buyers are comparing dates by eye before they taste them, oiled Kaluteh tends to win that first impression.

If You're Optimizing for Indulgence

Mazafati is simply the richer, more decadent eating experience, and it's the variety most associated internationally with "Iranian dates" as a category. If your customer base already knows and asks for Mazafati by name, there's little reason to substitute.

If You're Worried About Logistics

Kaluteh's lower moisture content makes it meaningfully more forgiving over a longer shipping route or where cold-chain infrastructure at the destination isn't guaranteed. Mazafati can absolutely still travel well, but it rewards a buyer who can move inventory quickly or maintain refrigeration end-to-end.
